The following is from an interview with Ross Sneddon, head Pastry chef at Claridges' Hotel in London.
'We currently have 16 pastry chefs but Claridges is a big operation, it runs 24 hours a day and that will be production and service.
Throughout the night the guys will make croissants and the Danish pastries so they are baked fresh ready for the morning and then in the morning we'll start to prepare the fruit and the breakfasts for the rooms and the restaurants.
That will then lead into 'Elevensies' which is served in the Foyer and then it's into lunch service and banqueting and conferences and then it's afternoon tea which is a focus for us and then it's dinner for the restaurants, the rooms and the bars; it's a full on day!

She just bakes when she 'feels' like it.. imagine 'feeling' like this every day, apart from days and time off, week in and week out? But these guys and gals do it, because they really, really want to!
No half-hearted workers work in the catering business at this level of expertise, for as he so rightly said "It's a full on day".. every day!
Talking about food reminds me that she was out and about in one of her favourite areas of London yesterday. SOHO.. and to where did she go and what goodies did she come home with?

She bought Parmesan Cheese. They're purveyors of FABULOUS Italian foods, fresh and packaged.

A big bag of Choi Sum, Lingham's Malaysian Garlic & Chilli Sauce (2), vegetarian Noodles. They sell everything you could possibly want in the way of Oriental food, fresh and packaged.
The first two shops are outstanding and where she has been shopping since she came to London in 1967. There used to be another branch of I Camisa, it was in Berwick Street but that shop closed twenty years ago, goodness me, is it that long ago already?
She has been shopping at Loon Fung in Gerard Street for about forty years, she remembers them opening and being delighted to get Chinese vegetables and other items which are necessary for her diet, because..
You can take the child out of a Malay kitchen but you can't take the love of Malay food out of the child..
Berwick Street used to have a thriving food market along three quarters of the street, from the Marlborough Street end right down to the passage where Raymond's Review Bar is / was(?). But the area has been 'tarted' up, where I Camisa was is now some plate-glass fronted something or other.
There were only three barrows there yesterday, the Fishmonger wasn't there, maybe he is there on a Saturday but she always had a cup of his Whelks in the old days. And he always got a Spider Crab for her if she asked him in advance.
Borovick, 16. Berwick Street, London W1. Tel: 020 7437 2180. This wonderful fabric company is still there, as are the other fabric shops, too many to mention!
Kleins, 5. Noel Street, just a pace or two off Berwick Street, London W1. Tel: 020 7437 6162. This amazing Haberdashery shop is still there, if you are an amateur needle person or a professional, you should know about this shop.
Now there are lots and lots of other shops that she uses and loves in Soho but that's your lot for today!
Time to set about our day, we have started it very slowly as it was so chilly-billy when we woke up that we went back to bed, the two of us, yes, we went snuggley-buggley under the quilt and dozed for two hours. The shame of it! Such bliss.. so cosy!
Well, she did walk a very, very long way yesterday and so today is an 'At Home' day, she has a couple of things to do for friends and some sewing, a much beloved, old cashmere dress by Jean Muir has a tiny hole which needs to be darned as does a black sweater.
Whoosh, the recipe for Chocolate Salami has gone to Joe in Canada and we hope to hear that he will be making them at the week end, she is making one this afternoon.
Then later on today we will tell you about a wonderful programme we saw last night on BBC4. About Appaloosa horses and a quest for their geographical origin.
