DENSE BREAD, WE DON'T EAT HOLES FOR BREAKFAST!

Now.. don't get me wrong, we lurve Sourdough and Tuscan bread.  But when we are telling our stomachs in the morning that "all is ok and that food is a'coming down", we like a heavier bread which we toast and let me tell you.. those toasted seeds are reallyreally tasty!

Which is why she bakes some Soda Breads in a tin. It makes for a far denser and moist'er (is that a word or have I just made it up?) loaf than the ones she bakes on a baking tray.

So that is why the tin baked breads require significantly longer in the oven, on a tray the dough is much shorter in height and the heat gets through the dough quicker, in a tin, the dough measures at least four to five inches and, therefore, it needs longer.

It is all trial and error and personal preference. And explains why she prefers Brioches to Croissants.

Onwards.. for there are poles to sit-upon.. laundry to do.. hair to wash and sheets to be ironed.

But before we go. Have you seen the photographs of Dudinka, a town in central Siberia? On the night of January 14th, the mains water pipe broke, the streets flooded, the temperature was 40 degrees below zero. Cars were encased in blocks of ice. Shiver my timbers..
