BUT WHEN SHE GOT THERE, THE CUPBOARD WAS BARE!

Now folks, you all know that's a gross fib! For when would I ever allow our food cupboards to be in such a dreadful state as bare?

However, what were missing were the Arborio Rice and the tin of Salmon. What WAS there was a sack (Arborio also comes in sacks and this one was standing with its' skinny side looking out) of PAELLA Rice and the tin turned out to be Clams!

HUH.. this meant that there had to be a major and speedy rethink of our lunch time menu, I am glad that there wasn't a line of hopeful Risotto eaters standing on our steps, for they would have had to go away with empty tummies.

"Ok.. now let's see what we DO have" said she, climbing up onto the small steps to peer into the rice and pasta cupboard. "Got it.. this will wonderfully with celery, carrots, chicken stock and albacore tuna"..

It turned out to be a box, we keep everything that moths or weevils would like to eat in tall clip-on lid plastic boxes with a few bay leaves tucked in amongst the contents, of FREEKEH, oh yo, happy days!

Freekeh, if you are unfamilar with this grain, is young wheat which has been roasted and cracked. It is highly nutricious, very high in fibre and it has a low glycemic index so it is suitable for managing diabetes. It contains the following trace metals: calcium, iron, potassium and sodium. We both love it for it remains a bit of crunchiness which is delicious.

So chopchop went two onions into olive oil to soften, then two cups of Freekeh were added and gently fried and turned so every grain was coated in oil, in went the juice of one lemon and four cups of chicken stock (see how versatile this lubbly-jubbly stuff is and how often she uses it), freshly ground black pepper, a little sea salt crumbled, then a carrot cut into quarters lengthwise and sliced and a sliced stalk of celery.

The heat under the big frying pan was turned up to boil, then back to simmer and we went off into the bathroom where she washed her hair. It was towel dryed and combed back, then we went back to find the freekeh almost ready.. a big tin of albacore tuna was tipped in as well as its' water, a bit more seasoning was added and with a good stir, it was ready.

OH, MY GOODNESS ME.. write it down quick folks, because it was absolutely fabulous!

The taste of the lemon juice with the tuna was a great combination and the crunchy celery and carrots were a good foil to the freekeh which still had a bit of a bite.

So now we are having a little 'Time-Out'. I'm up on my favourite perch on top a cuboard, for some weird reason she doesn't want me on her head, strange that, for I was allowed there this morning when she read the papers.

She has a couple of things to do and then we will write my next post, yes folks, it's a three day post today, it will be about the mysterious package which appeared on out front door.. the mystery was what was inside, for we knew who had put it there.. one of les trois filles.
