HUGO'S BAKED RICOTTA PUDDING.. With thanks to Waveney Provatoroff.

Now, I have no idea how she managed to, literally, put her hand on this recipe so quickly, it was almost as if she knew where it was. Which, considering the state of our poor home at this present moment in time, is or was a miraculous miracle!

Now.. don't, what ever you do use some inferior ricotta, splash your cash and either make it yourself OR trot quickly along to your nearest UPmarket Italian deli and get their FRESH ricotta.

You will need:
12 ozs / 375 g ricotta.
3 eggs separated.
4 ozs / 125 g caster sugar.
1 tsp of cinnamon powder - Indian Cinnamon NOT Chinese which is a different species.
3 fl ozs / 75 mls strong coffee.
2 ozs / 50 g chopped walnuts.

2 pint / 1 litre buttered mould. There has to be at least half of the dish empty as it rises!
Preheated oven 180C / 350F / Gas mark 4.

How to make it:
Blend the ricotta, egg yolks + 3 ozs / 75 g of sugar together and whisk in a bowl.
Stir in the coffee and the walnut pieces.
Whisk the egg whites up to stiff peaks and add the remaining sugar, whisk again.
Fold in the ricotta mixture and pour into the buttered mould.

THERE MUST BE ROOM FOR THE PUDDING TO RISE!

Bake in your preheated oven until the pudding is firm, about 50 minutes.
Turn off the heat and leave the pudding IN the oven until you are ready to serve it.
It is less likely to collapse if you treat this way!

Now we zoom to the question of weigh-in and to her astonishment (and mine) she maintained her weight this week! Which, as she ate everything that Michele asked if she'd like, is another miracle! 139 lbs aka 9 stone 13 lbs, the same weight for two weeks. (Is there perhaps something wrong with those scales, I wonder?)

But she came home, finally, from her jaunts about town with a determined look upon her face, well, the bit of her face you could see. For she had a Beanie on, plus the Max Mara parkas' hood up and a pair of sunglasses. Why the determined look? Well, she wants a 3 lbs loss next Monday.

What's the weather like where you are? It's crisp out there tonight, it was 'pretty' crisp all day with bright sunlight, we heard from Claudia that it was minus 22 Celsius last night in NYC.. gulp.. it's now zero here in London and heading downwards for minus 5 tonight.

And she sees no point in sitting in our 'sitting' room pretending to be a grown-up when mentally she's about sixteen (at the most) and longing to get into those fleecy pj's and she has remembered just how extra-snug a cotton camisole is underneath a pyjama top. So there was much rumaging around in a drawer and an extremely happy squeak when she found a DOUBLE camisole, you women know what I am taking about.

She has spoken with Angela, who is all geared up for their jaunt to Romford on Wednesday morning, mama will have to leave here at some ungodly hour because the Tube is supposedly going to be on strike that day.. boring.. she'll have to get there by bus, a number 11 to Liverpool Street and a number 48 for the last bit. They're due at Earth Gardens by 12.20 for 12.30 appointments, so can't be late.

I'm off to rootle about for a clementine, she's got to do her teeth and eye drops, enjoy the baked ricotta, it's an easy to make and delicious pudding.
