WINTER FOOD.. POACHED PEARS WITH MACKIE'S ICECREAM.. SO DELICIOUS!

We have been invited to supper by some friends, she said that she'll bring the pudding, so what is she going to make? 

Well she asked our hostess what she is serving and she is going to do a chicken and chick pea curry so something needs to be tasty to compliment the curry.

Now, pears at this time of year are brilliant, we eat a lot of them together with those easy peelers aka satsumas and clementines.

So she's going to poach pears in spiced wine but she's not going to poach them in red wine, she's going to use a white desert wine with lots of spices!

Ingredients:
400g golden caster sugar.
300ml of white desert wine.
250ml of water.
1 cinnamon stick.
2 star anise.
1 vanilla pod, split and opened.
2 long strips of orange zest.
A pear per person.
She does not peel or core the pears.

Method:
Put the sugar, wine, all the spices and the orange zest into a saucepan, bring the liquid to a gentle boil and then simmer for 5 minutes.
Trim a fraction off the base of the pears so that they will stand up straight and place them into the saucepan with the liquid.
Poach them with a lid on the pan for 25 - 30 minutes.
Lift them out of the pan with a slotted spoon.
Put them upright into a bowl, pour over the liquid and serve with a good icecream, we would use Mackie's* of Scotland vanilla! 
If you do them the day before they can chill.

Yum.. I love a good curry, what a good thing I was invited as well!
