LEMONS.. REAL LEMONS MADE INTO A PARTICULARLY FINE CAKE.

Dear Readers, so that there can be no grumbling that WE did not give this to YOU in time for the week end, here is the recipe for a very fine and lemony lemon cake.

Lemon Cake - it is even better the second day.

Ingredients.
295g unbleached all purpose flour.
1 tsp of baking powder.
5 large eggs.
300g vanilla sugar.
18.5cl creme fraiche or double cream.
105g unsalted butter, melted and cooled.
12.5cl freshly squeezed lemon juice.
Grated zest of 4 lemons.

Method.
Preheat oven to 350F / 175C. 
Butter 2 91/2 inch bread tins.
Combine eggs and sugar in a large bowl and mix .
With a blender at a slow speed, slowly add the creme fraiche (or cream), the flour, the baking powder, the melted butter, lemon juice and finally the lemon zest.
Beat until very smooth.
Divide the batter between the two tins. 
Place the tins in the centre of your oven and bake for about 1 hour, the cake should be golden in colour.
Remove from the oven and allow the cakes to cool 
in the tins. Then remove them from the tins and cut into thin slices. The cakes can be stored, wrapped in film, for two or three days.

Oh.. how SHE just lurves this cake. Sara, Bill's mother, gave HER the recipe when SHE stayed with her after HER operation. It is delicious as a dessert with very lemony lemon ice cream.

And, of course, it is scrummy served at tea time in the afternoon!

WE are, apparently, going to have a sunny week end! As long as it is warm and not too windy, I might go to the garden as well and perhaps I will be able to help that Referee by blowing 'his' whistle for him. 

It would be very pleasant to have fresh air blowing through MY feathers and a bit of old sun on MY face, SHE has lots to do, grass to cut, asparagus bed to weed. Lots of seed Potatoes to plant, they have all chitted properly and the weather forecast is for a few days of dry weather, perfect timing.

French and Runner Beans to start off at home, Broad (Fava) Beans to plant outside, March and April can be tricky months with strange weather patterns, OUR last frost date is not until June 9th! I know, very late indeedy!

SHE has to look at the Peonies, a scritch and a scratch will show who is a'growing? SHE does not cut last year's growth back until the middle of April. 

For WE are at sea level and a frost can and does roll up and across the huge meadow behind the garden and nip tender plants.. norty old Jack Frost but by April they will be strong enough not to be bothered by him.
