Blimey, that's a bit quick, isn't it? It was only driving them crazy in Illinois yesterday and the rain is due any minute this afternoon! The temperature has dropped significantly and she had to slap Beanie on her head when she went off to weigh-in as it was so cold!
I have been a'nibbling at the yumyum on my saucer, a trifle more egg and a snippet of carrot have been consumed, huh, dressed in an oriental mix.. very pleasant.
She was gratified to be to be told that she's lost 2.5lbs, so is back down to 9.12.5. The curious thing is that she has noticed she 'bloats' with certain vegetables.. kale being one of them! How sad is that, as she lurves crunchy kale cooked with a little bit of onion. But bloating isn't comfy, it does gruesome things to her digestion, to put it politely. She was pretty sure that she'd register a loss today, her tumtum's gone flat and her little finger ring is loose.
On the way home she went to MailBox to check for mail.. ooh.. a card from lovely Lorraine. A charming wax drawing done by herself, she's an accomplished artist and this card is now up on a shelf and will be kept.
Yes, that extraordinary weather that MaryLou told us about is a'coming! This mornings' sunny day disappeared and it was colder at midday when she left to weigh-in and spitting rain, so Beanie came off his stand, an umbrella handle, and they went off down to Fulham. She was glad of him as it got colder and rainier by the minute and she scuttled from the bus stop into group very quickly indeed.
Put her dish of steamed vegetables and prawns onto the table and weighed-in, then sat with Pat and Charlotte and talked. Then everyone got up and helped themselves to what everyone had brought, she was pleased to see that her dish was emptied quickly!
And she ate delicious curried sweet potatoes with chickpeas and squash, most of them are good cooks and this brings me to our recipe for today. Who doesn't like a good soup and this one is a cracker that she makes quite often as it is scrummy hot or cold!
What you need:
4 large carrots, peeled and chopped.
500g of beetroot fresh is best, scrubbed and chopped.
3 cloves of garlic, peeled and squashed.
4 leeks, washed, trimmed and finely sliced.
1.2 litres of vegetables stock.
1 bay leaf.
100g of fat free natural fromage frais.
Freshly ground black pepper.
Fresh chives chopped.
How to do it:
Place beetroots, carrots, leeks, garlic and the stock in a large saucepan.
Put on the lid and cook until the vegetables are tender.
Revove the bay leaf and allow to cool slightly.
Transfer the mixture to a food processor.
Blend until smooth.
Add the fromage frais - keeping some back for garnish - and whiz for a second or two.
Return the soup to the pan and re-heat gently.
Sprinkle with freshly ground black pepper and chives and serve with the extra fromage frais.
I know this will become a great favourite for many of you as it is easy and delicious hot or cold. And later this week, we will be giving you another two of our favourite soups, one has a Moroccan flavour to it and the other has bacon in it, you've guessed by now when the weather is tricky, we lurve soup.
Tomorrow she is going to see a new alternative health person, with the approval of Dr.Katherine, who is very keen on her patients taking an alternative and homeopathic route as often as possible and so she is seeing a woman in Chiswick who has come to her highly recommended by an old client. I will report back to you tomorrow upon her findings.
Chirp! She lost 2.5lbs, I've eaten a few more morsels, we have salmon tail, steamed green vegetables with baby sweet corn for supper and she's got the latest Tracy Chevalier book to read, so we've every reason to be chirpful, especially as it is now pouring with rain out there!
